Kavourmas is a very old dish that has its roots in Eastern Thrace. It was a way to preserve meat outside the refrigerator for a long time and was made mainly from pork, pork fat and herbs and spices. Today, following the traditional recipe, we make kavourmas with the addition of Greek buffalo meat along with mutton and pork. The meat is boiled for a long time with herbs, herbs, vegetables and spices and then drained and placed in special molds that press (squeeze) the product until it is completely drained.
