About the recipe

A very special recipe with the unique Buffalo Oregano Sausages of Boras, an ideal appetizer for tsipouro but also for ice-cold beer.

Materials:

  • 6 Buffalo Oregano Sausages (3 packages)

  • 2 tbsp balsamic vinegar with honey

  • 6 sprigs fresh thyme or 1 kg dried

  • 2+1/2 glasses of water, semi-sweet red wine

  • 1 tbsp olive oil

  • 1 whole cinnamon stick or 1/2 tsp.

  • 1 tsp honey

  • chili pepper (if we want it spicy)

  • 1 pinch of salt

Execution:

Preparation: Pierce the sausages with a fork on all sides. Marinate the sausages in a deep bowl for at least 2 hours, adding the wine and cinnamon.

Execution: In a non-stick saucepan, pour the wine from the marinade, the balsamic vinegar, the honey, the salt, the whole pepper and stir constantly until it boils. Then leave it for 3 minutes until the alcohol evaporates from the wine and add the sausages. Boil for about 10 minutes with the lid open over medium heat and then remove the sausages. Increase the heat and stir constantly until the sauce thickens sufficiently. Then in a large shallow pan, spread the olive oil and place the sausages, pouring the sauce over each sausage.


Baking: Sprinkle with thyme and bake for about 15 minutes on the oven grill, turning the sausages to brown on both sides. Serve ideally with homemade mashed potatoes.
