
About the recipe
We made another recipe with Greek Kerkini Buffalo meat with Asian influences from the original stir fry. The result was a spicy dish with crispy and juicy buffalo meat along with red Florina peppers.

Materials:
For the stir fry:
Kerkini Buffalo Meat BORAS (500gr) - pack
sesame oil
1 large onion, coarsely chopped
2 spring onions, only the stalk, not the leaves, finely chopped
2 cloves garlic
4 large Florina peppers, cut into strips
1 tsp. ground smoked paprika
1 tsp hot paprika
4 tbsp soy sauce
1 tsp brown sugar
1 tsp ginger powder
sesame
salt, pepper
For the marinade:
5 tbsp soy sauce
3 tbsp sesame oil
1 tbsp black sugar
2 tbsp vinegar (preferably apple cider vinegar)
2 bay leaves
For the basmati rice:
400g basmati rice
600ml. vegetable stock (1 vegetable cube dissolved in hot water)
a little ginger powder
juice of half a lime and a little zest
Execution:
Preparation for marinade: Cut the buffalo meat into small strips approximately 1 cm thick and 4 cm long. In a large bowl, add all the marinade ingredients along with the meat and mix well. Cover with plastic wrap and leave in the refrigerator for at least 4 hours.
Preparation for the rice: Rinse the rice well in cold water. In a large pan with a lid, add the rice after draining it and sauté with a spoonful of sweet sesame oil, adding the ginger. Deglaze with a spoonful of vinegar. Once the vinegar has evaporated, add the vegetable broth and stir well the sides of the pot so that there is no rice. Close the lid and cook for about 15-20 minutes without opening the lid at all on low heat. Open the lid and once our rice is ready, squeeze half a lime and add a little zest from its peel. Close the lid again and remove the rice from the heat.
Preparation for the stir fry: Remove the buffalo meat with the marinade from the refrigerator and dry it well with kitchen paper. Divide all our ingredients and the meat into 4 equal parts. Mix the spices all together in a bowl. It is important to prevent the food from boiling over from the large quantity and to prepare each portion separately.
Preheat a wok or a large shallow frying pan over high heat and add 2 tbsp sesame oil per serving. Once hot, add the meat and fry for about 2 minutes, stirring constantly. Remove the meat from the heat and add our vegetables. Stir constantly and sauté for about 4 minutes over very high heat. Add the meat again and all the spices that we have mixed (the amount that corresponds to the serving) as well as the soy sauce. Finally, add the sesame seeds and serve with rice and a little chopped spring onion.
Repeat the process for all portions, cleaning the wok or pan with kitchen paper in between.
