About the recipe

A very easy, delicious and quick recipe with a special buffalo sausage, the Greek Buffalo Pastrami Boras from 100% Greek Buffalo meat from Kerkini. The unique flavor of the Buffalo Pastrami combines perfectly with the pasta and together with the Kozani saffron and garlic the recipe takes off!!!

Materials:

  • 200 gr. Buffalo Pastrami Boras

  • 300 g "Casarecce" or penne pasta

  • 1 tbsp olive oil

  • 60 g cow's butter

  • 1 small onion, chopped

  • 1 clove of garlic

  • a little Kozani saffron

  • 80ml whole milk

  • 250ml beef broth

  • salt

  • pepper

Execution:

In a deep frying pan - pot, heat the olive oil and sauté the chopped onion well. Then add the Boras Buffalo Pastrami, chopped into strips, and the garlic. Sauté, stirring over medium heat.


In a glass, add the lukewarm milk and the Kozani yolk and mix well. Add it to the pan and lower the heat. Then add the butter and let it melt well.


Add the spaghetti and mix well. Add a little salt and a little freshly ground pepper. Mix over low heat and add the broth little by little (1 cube of broth in 250ml of hot water) and if necessary a little hot water during the cooking process.


Simmer, stirring frequently over medium heat with the lid open, until the pasta absorbs all the broth.

 

When our pasta is almost done (it should be a little crispy), remove from heat and cover with a lid.


After 5 minutes, serve with some grated sweet gruyere.
