
About the recipe
Buffalo Ossobuco is a special piece of meat with a lot of collagen that stands out for its special taste. So we created a recipe worthy of it and flavored it with fennel seeds and Chios mastic. Definitely a different recipe for you and your loved ones with Greek Buffalo meat from Kerkini.

Materials:
4 small slices of Kerkini – Boras Buffalo Ossobuco
1 large dried onion
1 large carrot
1 celery stalk
1 tsp red smoked paprika
a little flour
1/4 cup Oil
1 glass of dry white wine
2 pieces of Chios mastic
1 bay leaf
Fenugreek seeds
Thyme
salt, pepper
Execution:
Lightly flour the pieces of Buffalo Ossobuco Boras. In a deep frying pan, add the olive oil and fry them well on both sides.
Remove them from the pan and add the chopped onion, celery and carrot, also cut into small pieces.
Sauté well and then add the meat again, add the smoked paprika, thyme, bay leaf, fennel seeds, salt and pepper and mix well.
Deglaze with the wine and let it evaporate.
Add enough water to cover the meat well and add the mastic.
Simmer for about an hour and a half with the lid closed over medium heat.
At the end, add a little lemon zest.
Serve with french fries or rice.
