
About the recipe
We created a favorite recipe with Greek Buffalo meat that elevated the otherwise ordinary stew. A meal high in iron and protein with few calories.

Materials:
1 kilo of Kerkini - Boras buffalo meat, rat or scallop in medium pieces.
2 liters of water.
5 small carrots in halves or 3 large ones in rings.
3 potatoes in large cubes.
2 small onions cut in half.
1 leek, sliced.
3 celery stalks with leaves, finely chopped.
1 Bay leaf.
4 tablespoons of olive oil.
the juice of 1 lemon.
Salt, pepper.
1 tbsp sweet paprika.
Execution:
We put the Buffalo meat in pieces in water with a tablespoon of vinegar overnight and leave it covered in the refrigerator.
The next day, we take out at least a quarter of it before putting it in the pot and drain it.
Boil the buffalo meat over medium to low heat, gradually skimming off the foam from our broth.
After one hour of boiling, add the leek, bay leaf, leek and celery and continue boiling for another half hour.
Prick the meat with a fork to see if it's done. It should be tender.
Our next step is to remove the meat from the pot, set it aside, covered, and strain the broth.
Lightly sauté the remaining vegetables in the pot with the oil, over medium heat add the paprika and simmer with the broth. Once they boil, lower the heat, add the meat, salt and simmer for another 45 minutes.
Finally, add the juice of one lemon and mix lightly. Serve the Kerkini buffalo meat stew with some toasted bread…
